Pleasure in Memories


I was traveling last week, visiting my mom, and while I was there I made more doodles in my art journal. I also reviewed past entries and discovered some from July that begged for color, like this one of her hutch. Today I finished adding color to it. One thing I love about the ink doodles in my art journals is that I get to revisit each one and add fanciful color - or not - and when I do I take such pleasure in the childhood memories of meditative time and space invested in coloring books.

A Little More Color


A couple weeks ago I met some friends at a tavern and being early I doodled a bit, while chatting-up the bartender. Today, between making phone calls, drying produce, cooking, preparing packages for the Post and listing new Spirit Cords I put a little color to that doodle.

More Color, Revisited


Today I relaxed a bit with artful activities. Aside from making time to work on my Sketchbook Project, I went back to another black and white page of one of my journals to add color, a page lovingly titled "Imagined and Not."

I enjoy this activity … for me it is akin to playing in a coloring book, much like I did as a child. You too, I imagine.

Dried Peppers


Hot peppers, I love them. These are cayenne, the kind my mom would string and dry and leave hanging in the kitchen, where she'd snip off what she needed from the bunch throughout the winter. I'm packing mine into an old, glass top quart canning jar. I have other varieties drying too, but these are the quickest driers.

Green Tomato Relish


Today I made 15 pints of green tomato relish, 14 for the winter pantry and one for the refrigerator for The Boy to enjoy right away. I made do with what I had on hand - plenty of green plum tomatoes, red and green sweet peppers, hot peppers, onions, celery seed, black mustard seed and some sugar, cider vinegar and salt.

I still have more green tomatoes and I think these will become green tomato ketchup, thanks to my brilliant plurkish friends! Peace.

Dried Eggplant

I had so much beautiful. organically grown eggplant from a local farm that, aside from making grilled salad, antipasto, eggplant cheddar (a parmesan variation using sharp Vermont cheddar, (because that's what I had), I also dried a bit. Drying garden and farm harvests is a nice way to preserve foods for simple storage, and simple to do too. I am blessed with a plug-in variety dehydrator, but solar works too and even a low, low oven.

Yesterday I chopped the eggplant, salted and sweated it for a couple-few hours to release the excess moisture, placed them on my drying trays which were then popped into the dehydrator, set to about 130 degrees F where I let the magic happen until they were good and dried. Today I made a winter home for these little eggplant bits, which will now reside in my pantry chest.

These will be nice to rehydrate to use in cooking throughout the winter months, don't you think?

A Frozen Home for Sweet Basil

The days are cooling and the nights are getting quite chilly, so it's a matter of time - and not much of it - before that killing frost creeps in. For me, this becomes an urgent time. A time to start behaving as the squirrels … scurrying, collecting and storing tirelessly during the waning daylight hours of October.

We had our first light frost last night and I am very grateful that I had harvested the last of the sweet basil yesterday. In between other tasks I somehow managed to make a simple pesto for the freezer. By simple, I mean … basil, extra virgin olive oil and salt. No cheese, no roasted nuts. This way I can add the flavor, verve and green goodness of basil to anything I'm cooking, and can always add Pecorino, garlic and nuts to it later for the thing that most folks think of as "pesto."

I make my simple pesto in the food processor, just chopping the plant matter with a touch of sea or kosher salt and adding enough oil so that it holds itself together. Then I drop dollops of it, by whatever measure pleases me in the moment, onto a parchment-lined cookie sheet and pop it in the freezer for a few hours until they firm up (I let it go overnight this time - because linear time got in the way). Then I transfer them into freezer bags. Easy!

So today, that's just what I did. I bagged my little frozen basil kisses for their new home in a deep freeze.

Side note: One thing that amuses me, year after year, is the green thumb that comes with harvesting and plucking the leaves from the plant to make this freezer preserve. It's a stain that takes two-r-three days to wash-n-wear off.

Eggplant Antipasto

Today, along with a grilled eggplant, pepper, onion and garlic salad for the days ahead, I made two quarts of semi-preserved, semi-pickled eggplant antipasto. I heated some wine vinegar and tossed in some sweated rounds of eggplant and let that come back to heat and simmer a few minutes. I drained the eggplant and added slivered garlic and chopped cherry hot peppers, loaded the jars and topped them well with extra virgin olive oil. It already tastes quite good, but will improve as the days pass.

I foresee using this as a side dish, alone and mixed with other vegetables, in salads, on crusty bread and sandwiches and on pizza. What else, I wonder?

Room

I finally dried some apples with the lovely, local, organics that a sweet friend brought to me. Apple sauce too, and I still have several fresh orbs set aside for nibbling. I prepped a modest four trays and thought my tall quart jar would hold the dried rings. Alas, even with pushing them down, which I don't like doing with dried foods, there wasn't enough room for the batch.

So I employed my "spaghetti jar" and made room for all the delicious rings.

Now … I have to finish eating and using the dried apples remaining from last year. Ah, I love the challenges that abundance offers! Peace.

My Goal


Yesterday I finished processing more local, organic tomatoes into puree, this time for the freezer. Just for the record, that's a five gallon pot you're looking at and I had another gallon of roasted tomatoes to add to it. The Boy - bless his heart - helped me immensely by putting all of this through the mill to remove skin and seed. As he accomplished this, I prepped the puree in one quart packages for the freezer. All said and done we added 21 quarts to the freezer, this on top of the tomatoey goodness of fifty-some canned in our winter's pantry. Plus a quart I held aside to use for dinner this week.

So it seems that I made my goal to have at least one quart of good and known quality tomato puree for each week of the year. Dig it.
